Simple syrups are what separate boring drinks from cocktail recipes people actually remember. The basic concept is simple (sugar plus water), but when you infuse that base with herbs, fruit, spices, or tea, you add layers of flavor that would be impossible to achieve any other way.
I make batches of simple syrup every week because they last in the fridge and turn a five-minute cocktail into something that tastes like it came from a craft bar.
