Nothing says summer quite like a ripe, juicy peach. Turning that flavor into a syrup is one of my favorite ways to enjoy peach season a little longer. Peach simple syrup is sweet, fruity, and oh-so-versatile—you can use it in cocktails, mocktails, lemonade, iced tea, or even as a drizzle over pancakes and desserts.
I first made peach syrup when I had a basket of overripe peaches sitting on the counter, and it’s been a staple in my fridge ever since.

Sadly, I no longer have a peach tree growing at my house. In fact, I had to pull one out when we moved in because it was literally growing on the side of my home.
In case you didn’t know, you should never plant trees up against your house, as the roots will do a number on your foundation.
But I was able to dig out the tree, put it in a massive trash can, and wheel it over to my neighbor, who had plenty of room for a mature tree. She now gets a nice little haul of peaches that she shares with me every year.

- Use ripe peaches: The riper and juicier, the better the syrup flavor.
- Double strain for clarity: First with a strainer, then cheesecloth for a smooth, golden syrup.
- Add a flavor boost: Toss in a cinnamon stick, sprig of thyme, or a splash of lemon juice while simmering for extra depth.

How to Make Peach Simple Syrup
Ingredients
- 1 cup fresh peaches (sliced, pits removed)
- 1 cup water
- ½ cup sugar
Instructions
- In a medium saucepan, combine the peaches, water, and sugar. Bring to a simmer over medium heat.
- Cook for about 15 minutes, stirring occasionally.
- Remove from heat and gently mash the peaches with a potato masher to release more flavor.
- Let the mixture cool for 20–30 minutes so the fruit flavor fully infuses.
- Strain first through a fine mesh strainer, then again through cheesecloth for a clear(er) syrup.
- Let cool completely before transferring to an airtight container.
- Store in the refrigerator for up to 1 week or freeze in a sterilized glass jar for several months.
