This syrup brings the classic bergamot-citrus flavor of Earl Grey tea into a sweet, versatile mixer that works beautifully in cocktails, iced tea, lemonade, and even baked goods.
I first started making Earl Grey syrup when I wanted to recreate the flavor of a London Fog latte at home—but with a twist.

Now I keep a jar in the fridge to mix into gin cocktails, drizzle over pound cake, or stir into sparkling water for a quick mocktail. It’s rich, slightly floral, and just a bit citrusy—perfect for elevating everyday drinks.
Best of all, you can easy grab Earl Grey tea at your local grocery store or tea shop, or right here. For something a bit lighter, you can also use Lady Grey tea in place of Earl Grey in many of the cocktails I make.

Tips for Best Results
Taste as you go
Earl Grey can get bitter if steeped too long. Start at 3 minutes and adjust for your preferred flavor.
Loose leaf vs. bags
Loose leaf tends to give a more nuanced flavor, but high-quality tea bags work well too.
Make it richer
For an extra layer, swap in brown sugar or honey instead of white sugar for caramel or floral undertones.

How to Make Earl Grey Simple Syrup
Ingredients:
- 1 cup water
- 1 cup organic cane sugar
- 3 teaspoons loose leaf Earl Grey tea (about 9 grams) or 3 tea bags
Instructions:
- In a small saucepan, combine the water and sugar. Stir over medium heat until the sugar is fully dissolved.
- Remove from the heat and add the Earl Grey tea.
- Let the tea steep for 3–4 minutes, or until you reach your desired strength.
- Strain out the tea leaves (or remove the tea bags).
- Allow the syrup to cool, then store in a sealed jar or bottle in the refrigerator for a week or freeze it for a few months.
