Sugared rosemary is one of the easiest garnishes you can make, but it always looks impressive. The sugar catches the light, the rosemary keeps its shape, and the whole thing gives off a cozy, freshly fallen snow vibe.

It’s the perfect garnish for cocktails that call for a little drama without a lot of prep (I don’t know about you, but I don’t plan that far in advance for things as I should).

Happily, I have a giant rosemary bush that came with our house when we bought it, so I can pop outside to snip some herbs and sugar-coat them on demand.

However, if you don’t have your own rosemary plant, you can find fresh rosemary in the produce section at your grocery store or at your local farmers’ market.

Why Sugared Rosemary Works as a Garnish

Rosemary adds a soft piney aroma that pairs beautifully with citrus, cranberry, apple, and herbal cocktails. The sugar coating balances that herbal bite and gives you a frosted, festive look that feels right at home in winter drinks.

How to Use Sugared Rosemary in Cocktails

  • Tuck a sprig into the rim of a coupe or rocks glass
  • Lay one across the top of a drink for a simple, elegant look
  • Pair with cranberries, orange peel, or star anise for layered garnishes
  • Use with gin, vodka, bourbon, whiskey or sparkling wine cocktails

It’s especially good for holiday drinks, winter spritzes, and herbal cocktails.

Sugared Rosemary Recipe

Ingredients

  • 5–10 fresh rosemary sprigs
  • Water
  • White granulated sugar (about 1 cup)

Instructions

  1. Line a baking sheet with parchment paper.
  2. Gently run the rosemary sprigs under water to dampen them. Give them a little shake to remove any excess water.
  3. Place the damp rosemary on the prepared baking sheet (or a cooling rack).
  4. Sprinkle generously with sugar, turning the sprigs so they’re coated on all sides.
  5. Let the rosemary dry at room temperature for about 1 hour, until the sugar hardens and looks frosty.

Storage Tips

Sugared rosemary can be made 1 day in advance. Once fully dry, store it at room temperature in a single layer or a lightly covered container. Avoid moisture, which can melt the sugar coating. After two days, your rosemary will start to look limp and the sugar will begin to dissolve.
