Made with crushed dried juniper berries, this aromatic syrup brings bright pine-forward notes with citrus undertones. Perfect for gin cocktails, mocktails, and sparkling water, and pairs beautifully with lemon, rosemary, lavender, and apple.
Using a mortar and pestle, crush the dried juniper berries until they're broken down and fragrant.
In a small saucepan over medium heat, combine the sugar and water. Bring to a simmer (tiny bubbles), stirring occasionally until the sugar has completely dissolved.
Remove from heat and stir in the crushed juniper berries.
Let the syrup cool in the saucepan at room temperature for 30-45 minutes. Start tasting at the 30-minute mark to check if it's reached your desired flavor intensity. Be careful not to let it steep too long, as the flavor can become bitter.
Pour the syrup through a fine mesh strainer into a glass jar, discarding the berries. For an extra-clear syrup, strain once more through a cheesecloth to remove any remaining particulates.
Store in an airtight glass jar in the refrigerator for up to one week, or in the freezer for several months.
