This aromatic clove simple syrup brings bold warmth to fall and winter cocktails. Made with whole cloves and unrefined sugar, it delivers deep, slightly sweet flavor with hints of pepper and wood. Perfect for spiced old fashioneds, holiday punches, and warm toddies. Pairs wonderfully with bourbon, dark rum, apple, pear, and coffee flavors.
In a small saucepan over medium heat, combine the water and sugar. Stir constantly and bring the mixture close to a slow boil until the sugar is fully dissolved.
Reduce the heat to low and add the whole cloves.
Let the syrup simmer gently for about 15 minutes, stirring occasionally.
Turn off the heat and allow the syrup to cool at room temperature (taste your syrup to make sure it hasn't become too overpowering)
Strain out the cloves and pour the syrup into a clean bottle or jar. Double-strain the syrup through a fine-mesh strainer, then through cheesecloth to remove any particulates.
Cover and store in the refrigerator for a week, or store in a clean glass jar and freeze for several months.
