Ingredients

Cup
Water
1
Cup
White Sugar
5-6
Cinnamon Sticks
1/4-1/2
tsp
Vanilla extract or 1/2 Vanilla bean
Instructions
Pour water and sugar into a
small saucepan
. Stir over medium heat until sugar dissolves and the mixture comes to a slow boil.
Reduce heat to a gentle simmer. Add cinnamon sticks and vanilla. Go light on the vanilla so it doesn't take over.
Let the syrup simmer gently for about 5 minutes. Don't let it boil.
Remove from heat. Let steep for about 1 hour. Taste halfway through to check strength.
Remove cinnamon sticks. Strain through
cheesecloth
or a
fine mesh strainer
.
Pour into a clean glass jar. Refrigerate up to 1 week or freeze up to several months.
