Ripe Persimmon
Enough demerara sugar or white sugar to cover your persimmon slices.
Instructions
Thinly slice the persimmon using a sharp knife or mandolin
Arrange the slices in a single layer on a foil- or parchment-lined baking sheet.
Sprinkle generously with sugar, covering the surface all the way to the edges.
Broil on high for 2–5 minutes.
White sugar caramelizes faster.
Demerara sugar takes slightly longer but adds deeper flavor.
Watch closely. Once the edges start to brown and bubble, remove the tray.
Let the persimmons cool completely so the caramel sets.
