2Apples(Any variety works. A mix of Granny Smith and Honeycrisp is great.)
Instructions
Thinly slice the apples using a mandolin or a sharp knife. Aim for evenly thin slices so they dry at the same rate.
In a large frying pan, combine the sugar and water over medium heat until bubbling, then reduce to a gentle simmer.
Add the apple slices in a single layer if possible, trying not to overlap them.
Simmer for about 30 minutes, until the apples begin to look slightly translucent. They won’t turn fully clear, so don’t wait for that. Some spots may lighten more than others, and that’s normal.
Transfer the slices to a parchment-lined baking sheet or your air fryer rack.If you have an oven-safe wire rack, place it over parchment to catch drips and make cleanup easier, while being able to dry both sides at the same time.
Dry the apples (flipping every hour or so):Oven: 180°F for 2–5 hoursAir fryer: 165°F for 2–4 hoursDrying time depends on slice thickness.
Once mostly dry but still slightly tacky, remove from heat.
Lightly sprinkle with white sugar to absorb any remaining stickiness.
