I’m always hunting for new ways to use pears in cocktails. They’ve got this clean, fresh but somehow deep flavor that’s hard to beat. When autumn rolls around, you’ll find me at the farmers market loading up on pears like I’m preparing for winter. I’ve got two little pear trees in my yard that aren’t fruiting yet, but I’m crossing my fingers that one day I’ll be making pear purée and juice straight from my driveway garden.

Until then, I make this Pear Ginger Sour on repeat.

Pear brings soft, mellow sweetness that feels almost creamy when you shake it with ginger syrup and lemon juice. Everything snaps into balance. It’s refreshing and cozy at the same time, which is why I make it year-round. Fall evenings? Yes. Summer patio hangs? You betcha!

Why This Cocktail Works

Pear adds soft sweetness. It’s fruit-forward without ever tasting heavy or sugary. Think ripe and mellow, not syrupy. But the flavor can be easily lost if not handled with care when using ginger.

Ginger syrup brings warmth and spice. It lifts the drink and keeps it from leaning too sweet. You get that little tingle on the back of your tongue. Just be VERY careful how much you use and test your ginger simple syrup to see how strong it is before you add to your shaker.

Lemon juice brightens everything. You get that classic sour structure, making the whole thing crisp and refreshing instead of flat. Use fresh lemons whenever possible. The stuff in a bottle will just land flat in the cocktail.

Vodka or gin keeps it clean. Both spirits let the pear and ginger shine. Vodka keeps it neutral, while gin adds subtle botanicals that play really nicely with the ginger.

Mocktail Version

Skip the alcohol and still keep all the flavor.

Use non-alcoholic gin or skip the spirit entirely and add 1 oz pear juice to boost body and sweetness. Shake as usual and serve in a coupe.

Still garnish with candied ginger—it adds a fun little hit of spice.

Twist Variations

Make it cozier: Swap the pear purée for spiced pear butter. This adds warmth, richness, and a subtle spice that screams fall.

Make it fruitier: Use pear vodka instead of regular vodka or gin for an extra pear punch, which works particularly well when you have strong ginger to compete with in the drink.

Make it zingier: Add 1 to 2 drops of ginger tincture or a dash of ginger beer on top for extra bite.

Home Bar Tips

Use ripe pears for better purée. You want them soft but not mushy. Think ripe peach, not crunchy apple. If they’re hard, let them sit on your counter for a couple days.

Double-strain for smoother texture. Pear purée can be pulpy. This keeps your sour silky and elegant.

Don’t skip the lemon. It keeps the drink from turning too sweet or flat. Fresh lemon juice is essential.

Shake hard. The frothier the shake, the better the texture. You want that drink nice and airy and COLD.

Troubleshooting

Too sweet? Add a little more lemon juice. You can also reduce ginger syrup or increase vodka by 0.25 oz.

Too tart? Add a splash more pear purée or increase ginger syrup slightly.

Too thick? Shake longer for more dilution or add a tiny splash of water or soda when straining.

The ginger taste is too strong? Reduce syrup to 0.5 oz. You can replace the missing syrup with regular simple syrup if you want to keep it sweet.

  • 2 oz vodka or gin
  • 1 oz pear purée
  • 0.75 oz ginger syrup
  • 0.75 oz lemon juice
  • Garnish: Candied ginger

Instructions

  1. Add vodka (or gin), pear purée, ginger syrup, and lemon juice to a cocktail shaker filled with ice.
  2. Shake until very cold and lightly frothy.
  3. Strain into a chilled coupe glass.
  4. Garnish with a piece of candied ginger for that sweet-spicy pop.

How to Make Pear Purée

This is super simple and you can make a small batch that lasts several days.

Peel and chop one ripe pear. Bartlett, Anjou, Bosc, or Comice work well. Use whichever looks best at your store. Blend until smooth. Add a splash of water if needed to loosen it up. Strain for a silkier texture.

Store in the fridge for 3 to 4 days, or freeze in small portions for later.

Don’t want to make it from scratch? Grab pear baby food (yes, really, it works great) or pear nectar for a quick shortcut that tastes just as good.

How to Make Ginger Simple Syrup

This syrup is warm, spicy, and just sweet enough to balance the tart lemon and soft pear.

Ingredients:

  • 1 cup sugar
  • 1 cup water
  • ½ cup fresh ginger slices

Instructions:

Combine sugar, water, and ginger slices in a small saucepan. Simmer for 5 to 8 minutes. Remove from heat and let it steep another 10 minutes. Strain and chill.
