Living in Southern California means no snow at my house. No frosty mornings. No evergreen forests stretching for miles.
So when we want winter, we have to seek it out. My family and I drive up to the mountains whenever we can, and plan trips to colder places. And when I can’t physically get to the forest? I bring the forest to my glass.
The Nordic Bramble is my cool-climate take on the classic bramble cocktail, inspired by evergreen forests, tart berries, and that crisp northern air I miss from living in Seattle. It’s bright and citrusy at first sip, then slowly opens into soft pine notes and juicy blackberry depth.

Gin provides a clean botanical base, pine needle simple syrup adds a very subtle evergreen depth, and lemon keeps everything sharp and refreshing. The blackberry purée drizzle adds a pop of dark fruit that settles gently through the drink as you sip.
Together, they create a layered flavor that feels seasonal without leaning too wintery or too sweet.
You could simply muddle the blackberry straight into the cocktail, but what fun is that?

What’s is a Classic Bramble?
The original bramble was created in 1984 by bartender Dick Bradsell at Fred’s Club in London. It’s a gin sour (gin, lemon juice, simple syrup) with crème de mûre (blackberry liqueur) drizzled over crushed ice.
The Nordic Bramble takes that structure and swaps the simple syrup for pine syrup and the liqueur for fresh blackberry purée. If I don’t have to buy another liqueur for my cabinet, and a fresh substitute works just as well, you better believe I’m going to do that instead of running out to the liquor store.

How to Make Blackberry Purée
It’s easy to make blackberry purée at home. Take fresh or frozen blackberries, mash them through a fine-mesh strainer with the back of a spoon.
The strainer catches all the seeds and pulp, leaving you with smooth, deep purple purée that drizzles like magic through your cocktail. Store any extra in the fridge for up to a week or freeze it in small portions to use later.
Serving Notes
Serve the Nordic Bramble in a chilled coupe glass to highlight the layered look of the blackberry drizzle and keep the presentation clean and modern. Pop your glass in the freezer 10 minutes before serving, and it will be cold enough to enjoy throughout the night.
Essential Bar Tools
You’ll need a Boston shaker to get this properly chilled, and a fine-mesh strainer for both making the blackberry purée and straining the cocktail.
For garnishing, keep some dehydrated lemon slices on hand, or add a sprig of rosemary.

The Mocktail Version
This drink translates well into a mocktail thanks to the bold citrus, evergreen notes, and rich blackberry finish. It stays layered and interesting without feeling flat or overly sweet.
Non-alcoholic gin keeps those botanical notes, and the pine syrup does all the heavy lifting for complexity.

- 2 oz gin
- 1 oz fresh lemon juice (use a citrus juicer)
- ¾ oz pine needle simple syrup
- Blackberry purée (for drizzle)
Instructions:
- Add gin, lemon juice, and pine syrup to a cocktail shaker filled with ice.
- Shake until well chilled.
- Strain into a chilled coupe glass.
- Gently drizzle blackberry purée over the top of the cocktail using a spoon or small pour.
