Guava simple syrup is bright, tropical, and surprisingly versatile. It has a soft sweetness with a little tang that works just as well in cocktails as it does in mocktails, lemonades, and even iced tea. Making it at home means you get real fruit flavor instead of artificial guava taste that doesn’t do this fruit justice.

I never really thought much about guavas until I moved into a house with two very sad-looking guava trees and a neighborhood filled with trees dropping fruit left and right on the sidewalks.

Three years after buying our house, my guava trees started giving more than one or two fruits, and were happy and thriving once again, but before that, I had already started to play with this SoCal-loving produce.

Guava bread, guava paste, simple syrup, and guava cocktails soon became part of my seasonal repertoire.

Still, this fruit has a secret despite being known for use in warm-weather drinks, tiki-style cocktails, and anything that could use a juicy tropical boost. Guava actually isn’t ready to pick until winter.

I can usually start grabbing some from my neighbors’ trees in November and keep going through January on my own trees. Not quite the summer fruit people imagine, eh?

What Does Guava Taste Like?

Guava is lightly sweet, with notes of pear, strawberry, and tropical citrus. When cooked into a syrup, the flavor becomes smoother and more concentrated, but still fresh and fruity. Some people think it smells like passion fruit, but it is definitely not that.

Guava is its own master in the flavor department and pairs beautifully with citrus, rum, tequila alternatives, vodka, and sparkling drinks.

If you can’t find guava puree or fresh guavas anywhere, but you still want to infuse some guava flavor, you can buy the syrup already made here. It’s not as good, but it will do the trick for your tiki drinks.

Storage Tips

Store guava simple syrup in an airtight container in the refrigerator for up to 1–2 weeks. For longer storage, freeze it in ice cube trays or small mason jars like these and thaw as needed.

How to Use Guava Syrup

Guava syrup adds an easy tropical twist to all kinds of drinks and treats.

Try it in:

  • Rum or vodka cocktails
  • Spritzes with soda water or sparkling wine
  • Lemonade or iced tea
  • Mocktails with lime juice and ginger beer
  • Drizzled over shaved ice or mixed into smoothies

It’s also a great way to turn a basic drink into something that feels vacation-ready.

Ingredients

  • 1 cup water
  • 1 cup sugar
  • 1 cup guava purée or fresh guava (quartered or sliced)

Instructions

  1. If using fresh guava, wash the fruit and slice it into quarters or eighths. You can leave the skin on—no need to peel.
  2. In a saucepan, combine the water and sugar. Bring to a boil, then reduce to a simmer and stir until the sugar is completely dissolved.
  3. Add the guava to the saucepan and bring the mixture back to a gentle simmer.
  4. Simmer for about 15 minutes, until the fruit is very soft and fragrant.
  5. Remove from heat and allow the syrup to cool to room temperature.

Choose Your Flavor Strength

  • For more intense guava flavor: Use a blender or immersion blender to purée the fruit directly in the syrup.
  • For a lighter, cleaner flavor: Skip blending and move straight to straining.
  1. Double strain the syrup—first through a fine mesh strainer, then through cheesecloth—to remove pulp and all guava seeds.
    The seeds won’t hurt you, but they are very hard to chew, so this step matters.
  2. Pour into a clean glass jar or bottle and refrigerate.
