Clove simple syrup is bold, cozy, and full of warmth. Personally, I can’t get enough of cloves, but I hate ham, which is really the only place I’ve seen whole cloves used (unless you count oranges, but I forget why people do that). And no, I don’t grow my own cloves in my garden. I buy them from the spice shop or grocery store like the rest of you. Ha!

Clove Simple Syrup Recipe
Ingredients
- 1 cup unrefined sugar
- 1 cup water
- 2–3 tablespoons whole cloves
Instructions
- In a small saucepan over medium heat, combine the water and sugar. Stir constantly and bring the mixture close to a slow boil until the sugar is fully dissolved.
- Reduce the heat to low and add the whole cloves.
- Let the syrup simmer gently for about 15 minutes, stirring occasionally.
- Turn off the heat and allow the syrup to cool at room temperature (taste your syrup to make sure it hasn’t become too overpowering)
- Strain out the cloves and pour the syrup into a clean bottle or jar. Double-strain the syrup through a fine-mesh strainer, then through cheesecloth to remove any particulates.
- Cover and store in the refrigerator for a week, or store in a clean glass jar and freeze for several months.
Storage Tips
Store clove simple syrup in an airtight glass container in the fridge for up to a week. For longer storage, freezing in small batches is a great option—just thaw as needed.
