Clove simple syrup is bold, cozy, and full of warmth. Cloves have a deep, slightly sweet spice with hints of pepper and wood, making this syrup perfect for adding richness to fall and winter cocktails. Using unrefined sugar gives the syrup a little extra depth, which works perfectly with the strong clove spice.

Personally, I can’t get enough of cloves, but I hate ham, which is really the only place I’ve seen whole cloves used (unless you count oranges, but I forget why people do that). So, anytime I can infuse that warm clove taste into my cocktails and mocktails through simple syrups, you better believe I’m going to try.

And no, I don’t grow my own cloves in my garden. I buy them from the spice shop or grocery store like the rest of you. Ha!

  1. In a small saucepan over medium heat, combine the water and sugar. Stir constantly and bring the mixture close to a slow boil until the sugar is fully dissolved.
  2. Reduce the heat to low and add the whole cloves.
  3. Let the syrup simmer gently for about 15 minutes, stirring occasionally.
  4. Turn off the heat and allow the syrup to cool at room temperature (taste your syrup to make sure it hasn’t become too overpowering)
  5. Strain out the cloves and pour the syrup into a clean bottle or jar. Double-strain the syrup through a fine-mesh strainer, then through cheesecloth to remove any particulates.
  6. Cover and store in the refrigerator for a week, or store in a clean glass jar and freeze for several months.

Storage Tips

Store clove simple syrup in an airtight glass container in the fridge for up to a week. For longer storage, freezing in small batches is a great option—just thaw as needed.
