Caramelized persimmons are a fast, dramatic garnish that feels a little fancy without much effort. The sugar melts and bubbles under the broiler, creating crisp edges and a lightly smoky caramel flavor. Think of this as a brûlée-style fruit garnish you can make in minutes. That is if you have persimmons on hand.

If you have never heard of a persimmon, you are not alone. We moved into a house with four persimmon trees, and I didn’t even know what they were. I had to ask a neighbor.

I quickly learned that these highly coveted autumn fruits are not only good fresh, but great dehydrated, candied, and caramelized.

How to Use Caramelized Persimmons in Cocktails

Storage Notes

Caramelized persimmons are best used the same day. Once cooled, they can be stored in a single layer (or between parchment or wax paper) in an airtight container at room temperature for several hours. Humidity will soften the caramel over time, so for best texture, garnish close to serving.

Ingredients

  • 1 ripe persimmon
  • Demerara sugar or white sugar

Instructions

  1. Thinly slice the persimmon using a sharp knife or mandolin (a simple one like this works great).
  2. Arrange the slices in a single layer on a foil- or parchment-lined baking sheet.
  3. Sprinkle generously with sugar, covering the surface all the way to the edges.
  4. Broil on high for 2–5 minutes.
    • White sugar caramelizes faster
    • Demerara sugar takes slightly longer but adds deeper flavor
  5. Watch closely. Once the edges start to brown and bubble, remove the tray.
  6. Let the persimmons cool completely so the caramel sets.
