I grow tons of thyme in my garden here in California, so it’s super easy for me to whip up a thyme simple syrup on a whim. If you don’t grow herbs, you can easily find fresh thyme in the produce section of your grocery store.

DO NOT use dried thyme, as it will give you a very different, less fresh taste.

How to Make Thyme-Infused Honey Syrup

In a small saucepan, combine:

  • ½ cup honey
  • ½ cup water
  • 4–5 fresh thyme sprigs

Simmer until the honey is fully dissolved. Remove from heat, add fresh thyme, and let the thyme steep for 15–30 minutes. Strain and store in the fridge for up to 2 weeks.

Mocktail Version: Thyme Lemon Honey Fizz

Still want that herby-sweet punch without the bourbon? Try this non-alcoholic version:

  • ¾ oz lemon juice
  • ¾ oz thyme honey syrup
  • 2 oz cold water
  • 2–3 oz club soda or sparkling water
  • Optional: egg white or aquafaba for foam

Dry shake (if using egg white/aquafaba), then shake again with ice. Strain into a glass and top with soda. Garnish as above.

It’s crisp, botanical, and wonderfully balanced — a perfect zero-proof option that still feels like a treat. You could also try it with a little fresh apple cider if you want a real twist.

  • Try Rye: Use rye whiskey for a spicier profile that complements the thyme beautifully.
  • Swap Citrus: Sub in grapefruit or orange juice for a new take on the sour base.
  • Flavored Honey: Infuse your honey syrup with ginger, lavender, or even black pepper for added depth.

Thyme Honey Lemon Sour Recipe

Ingredients:

  • 2 oz bourbon
  • 0.5 oz fresh lemon juice
  • 0.75 oz thyme-infused honey syrup
  • Optional: 0.5 oz egg white or aquafaba
  • Garnish: Tiny thyme sprig or lemon twist wrapped around thyme

Instructions:

  1. Dry Shake
    Add all ingredients (including the egg white or aquafaba, if using) to a shaker without ice. Shake for 15 seconds to build that velvety foam.
  2. Shake Again
    Add ice to your shaker and shake another 15–20 seconds until well chilled.
  3. Strain & Serve
    Strain into a chilled coupe or rocks glass. Top with your chosen garnish — a little thyme sprig tucked into the foam or a lemon twist coiled around the thyme makes it extra pretty and impressive.
