There’s nothing like sipping a cocktail that feels like a walk through Oregon’s misty forests. The scent of thyme in the air, wild blackberries clinging to the edges of the trail, the tart kiss of lemon lingering after the rain.
The Thyme Blackberry Bourbon Bramble captures all of that—earthy, juicy, a little rugged, and totally unforgettable.

When we lived in the Pacific Northwest, we literally picked blackberries off of the side of the road (above dog height… for obvious reasons).
Now I have to go to the farmer’s market or grocery store to buy a pint, but at least I can grow thyme year round and lemons at my house in Southern California.
It’s a nice trade off, although I’m still trying to grow blackberries in a pot at my house.
I shall prevail!

Why Thyme and Blackberry in a Bramble
This cocktail is the lovechild of a classic bramble and a whiskey smash, reimagined with Oregon and Washington State’s late-summer flavors.
Crushed blackberries swirl into rich bourbon and lemon, while thyme syrup adds a savory, herbal edge that ties it all together. It’s rustic yet refined, perfect for slow evenings on the porch or paired with a campfire and good stories.
If you don’t want your cocktail too sweet, but do like a little fruity brightness, this is the cocktail you will want to keep on file for late summer and autumn.

- Lowball or Rocks Glasses
- Channel Knife
- Fine mesh strainer
- Cocktail strainer
- Jigger or small measuring cup
- Muddler or wooden spoon
- Mandoline Slicer
- Citrus juicer (or try this one)

Thyme Blackberry Bourbon Bramble Recipe
Ingredients:
- 2 oz bourbon
- ¾ oz fresh lemon juice
- ¾ oz thyme syrup
- 5–6 fresh blackberries
- Crushed ice
Instructions:
- In a cocktail shaker, combine the bourbon, lemon juice, blackberries and thyme syrup.
- Lightly muddle the blackberries in the liquid.
- Add ice and shake well (about 10–15 seconds).
- Fill the glass with crushed ice and strain the cocktail over the top.
- Garnish with a few extra blackberries and, if you like, a fresh thyme sprig. (I use these cocktail picks to keep mine in place so they don’t float all over the place.)
Add a Twist:
- Rye instead of bourbon for a spicier backbone.
- More thyme syrup for a deeper herbal infusion.
Mocktail Version: Thyme Blackberry Bramble Spritz
Just because you’re skipping the bourbon doesn’t mean you have to skip the flavor. This zero-proof version is just as layered and satisfying.
Ingredients:
- ¾ oz fresh lemon juice
- ¾ oz blackberry syrup (or muddled blackberries with simple syrup)
- ¾ oz thyme syrup
- 3 oz club soda or sparkling water
- Crushed ice
- Blackberries and thyme for garnish
Instructions:
- In a shaker or glass, combine lemon juice, blackberry syrup, and thyme syrup.
- Fill a glass with crushed ice.
- Pour mixture over ice, then top with sparkling water.
- Stir gently and garnish with blackberries and a thyme sprig.
Refreshing, a little tart, and bursting with foraged forest flavor—just without the booze.
