I’ve got a massive rosemary bush on the side of my house that I raid for recipes, but a rosemary plant in a pot on the windowsill will work just as well if you are short on space.

Ingredients:

  • 1 cup water
  • 1 cup sugar
  • 3–5 rosemary sprigs (fresh)

Instructions:

  1. Combine water and sugar in a saucepan over medium heat. Stir until the sugar dissolves.
  2. Add the rosemary sprigs and bring the mixture just to a simmer.
  3. Turn off the heat and let the rosemary steep for 15–30 minutes, depending on how strong you want the flavor.
  4. Strain out the rosemary in a cheesecloth and let the syrup cool completely.
  5. Store in a sealed glass container in the fridge for up to 2 weeks (up to one week is better and more likely though).
