What Gin to Use

This recipe really shines with Ahascragh Distillers’ Xin Xin Gin (Co. Galway, Ireland), which already has persimmon in its list of botanicals.

The fresh persimmon puree amplifies those notes without overwhelming the botanicals.

If you are going to use a gorgeous-on-its-own gin in a cocktail, use it with something that only makes it better, not masks it.

It’s simple to shake, easy to scale up for parties, and a great way to introduce people to persimmons if they’ve never used them before.

Better yet, we have two mature persimmon trees that give us a massive crop every other year, so having as many things to do with persimmon as possible is a lifesaver.

The fact that it is great in a cocktail is just a bonus.

Choose the right persimmons.
Fuyu persimmons (the squat ones) are perfect. They’re sweet and mild even when firm. Hachiya persimmons must be fully soft or they’ll taste tannic.

Your honey syrup matters.
Orange blossom or wildflower honey adds depth and a subtle floral lift.

Shake longer than you think.
Persimmon purée needs enough dilution to blend smoothly and break up the pectin. A solid 12–15 second shake makes a huge difference.

Double strain.
This keeps the drink smooth and removes any fibrous bits from the persimmon.

Chill your coupe.
A cold glass keeps the cocktail bright and crisp longer.

Troubleshooting

“It’s too sweet.”

  • Add another 0.25 oz lemon
  • Increase gin to 2.25 oz
  • Use less honey next round

“It tastes too thick.”

  • Thin your purée with a splash of water
  • Shake harder for better dilution
  • Double strain to remove extra pulp

“The persimmon flavor isn’t strong enough.”

  • Add up to 0.75 oz purée
  • Use a super ripe persimmon
  • Try a tiny splash of vanilla (⅛ tsp)
  • Keep in mind that persimmon is a very subtle flavor, one you can enhance and not mask, but it won’t be punching you in the face with flavor either.

“The drink looks cloudy.”
Totally normal with purée-based cocktails. Double straining helps, but cloudiness = flavor.

Glass: Coupe or Nick & Nora

Ingredients

  • 2 oz Xin Xin Gin (or any bright, citrus-forward gin)
  • 0.5 oz persimmon purée
  • 0.75 oz honey syrup
  • 0.75 oz fresh lemon juice
  • Ice

Garnish: thin persimmon slice, dehydrated persimmon, or lemon twist

Instructions

  1. Add gin, persimmon purée, honey syrup, and lemon juice to a shaker with ice.
  2. Shake hard for 12–15 seconds until the drink is cold and smooth.
  3. Double-strain into a chilled coupe to remove any pulp (persimmons are high in pectin, so they need a good shake and strain).
  4. Garnish with a persimmon slice or a lemon twist.

How to Make Persimmon Purée

You only need one ripe Fuyu persimmon to make a few cocktails.

  1. Peel and chop 1–2 ripe Fuyu persimmons.
  2. Blend until completely smooth.
  3. Add a splash of water if it’s too thick.
  4. Optional: strain for an ultra-silky texture.

Purée will keep in the fridge for 3–4 days or up to a month frozen.

How to Make Honey Syrup

Classic Bee’s Knees cocktails always use honey syrup—not straight honey—because it mixes more evenly when shaken.
