While almost every bar offers a “cherry blossom” cocktail, only a handful actually use cherry blossoms in their concoctions. Instead, they use the much easier-to-source cherries and cherry liquor to make their drinks.

I’ve done a lot of digging to find a cherry blossom liquor, cherry blossom syrup, and even salt-preserved cherry blossoms.
Each has been used to create a cocktail, but this green tea spritz is the easiest way to infuse a little sakura into your springtime.
My Cherry Blossom Green Tea Spritz is the kind of drink that feels like you should be sipping it in a garden surrounded by fluttering petals. It’s light with a very subtle flavor, and just enough green tea to give it an earthy backbone.
By using this Cherry Blossom Green Tea to make the simple syrup you get the subtle floral sweetness of the cherry blossoms, without all of the hassle of tracking down cherry blossoms.
Thanks to this tea combo, all you need is a little Prosecco and soda water to mix up something bubbly and bright.

How to make a cherry blossom green tea simple syrup
- Mix equal parts water and sugar into a sauce pan and bring to a slow boil, stirring regularly until the sugar has dissolved.
- Take the pot off the stove and allow the simple syrup to cool to about 160 degrees Fahrenheit. It’s important to allow the liquid to cool so that it doesn’t burn the delicate green tea leaves.
- Steep the leaves for about 2-4 minutes or until your desired strength.
- Allow to the tea syrup to cool to room temperature before putting it into a mason jar.
- Save the syrup in the refrigerator for about a week. You can also pop it in the freezer for a few months.

- 4 oz chilled Prosecco
- 1 oz soda water
- Garnish: 1–2 mint leaves or rehydrated cherry blossom
Instructions
- Add cherry blossom green tea syrup to a wine glass or spritz glass.
- Pour in the Prosecco, then gently top with soda water.
- Stir lightly to combine.
- Garnish with fresh mint or a rehydrated cherry blossom for an extra bit of charm.
Mocktail Version: Cherry Blossom Sparkler
For a non-alcoholic twist, swap the Prosecco for a dry, non-alcoholic sparkling wine or even sparkling white grape juice.
