There’s something about the first crisp fall evening that just begs for a cozy cocktail—and this one hits all the right notes. The Autumn Harvest Whiskey Sour blends smooth whiskey, fresh apple cider, a touch of maple, and a bright squeeze of lemon. It’s warm, tart, and just sweet enough.
Think of it as your favorite apple orchard visit… but in a glass, and without the hay stuck to your sweater.

If you already love a classic whiskey sour, this version leans into everything great about autumn without making you feel like you’re drinking a candle.
And if whiskey isn’t your thing?
This recipe is surprisingly delicious with gin, too—light, crisp, and still perfectly seasonal. (Yes, we’re giving you permission to break the rules. You’re welcome.)
Home Bar Tips
Use fresh apple cider.
That shelf-stable juice from the grocery store that’s been there since March? It won’t hit the same. Fresh cider adds body, and sweetness.
Maple syrup matters.
Use real maple syrup—not “pancake syrup.” The darker the grade, the richer the flavor.
Play with your base spirit.
Rye makes it spicier and more assertive. Bourbon makes it rounder and sweeter, while gin creates a lighter, botanical version .
Balance is everything.
If your cider is crazy sweet, bump the lemon up by 0.25 oz. Want more richness? Add an extra barspoon of maple. Your taste buds will tell you what to do.
Go big on garnish.
A thin apple slice, an apple fan, or a cinnamon stick are super easy and look great.

What If I Don’t Have…?
No maple syrup?
Honey works beautifully as a substitute. It’ll give you a different flavor profile—a little more floral, a little less caramelly—but it’s still delicious. Use the same amount (0.5 oz). Agave nectar also works in a pinch, though it’s more neutral in flavor.
No Angostura bitters?
Add a tiny pinch of ground cinnamon or allspice directly to your shaker. Start small because ground spices are potent. You’re going for a hint of warmth, not a mouthful of spice cabinet.
No cocktail shaker?
A 16 oz mason jar with a tight-fitting lid like this one works perfectly.
Can’t find fresh apple cider?
Here’s how to doctor store-bought apple juice so it doesn’t taste like disappointment:
- Add a cinnamon stick and 2–3 whole cloves to the juice
- Gently warm it on the stove for 5 minutes (don’t boil)
- Let it cool completely before using
- This adds depth and makes it taste way more “cider-like”
No lemons?
Lime juice works in a true emergency, though it’ll change the flavor. You could also use a splash of apple cider vinegar (0.25 oz max), mixed with a bit of water, to add the necessary acid without citrus.

Troubleshooting
“Help, mine’s too sweet!”
- Add more lemon juice, 0.25 oz at a time, until it balances out
- Or add an extra 0.5 oz of whiskey to give it more backbone
- Next time: use less maple syrup or check if your cider is super sweet
“This is way too tart/sour!”
- Add another 0.25 oz of maple syrup
- Make sure your lemon juice is fresh—bottled lemon juice can taste harsher
- Try adding one more dash of bitters to round out the flavors
- Next time: measure your lemon juice carefully (it’s easy to over-pour)
“It tastes weak and watery”
- You probably shook it too long and over-diluted it
- Remake it with a shorter shake time (10 seconds max)
- Use larger ice cubes—they melt slower than small crushed ice
- Make sure you’re using the full 1.5 oz of whiskey
“The flavors aren’t blending—it tastes like separate ingredients”
- Shake it longer and more vigorously—you need to properly mix and chill everything
- Make sure your ice is fresh and fully frozen (soft ice doesn’t work as well)
- Let it sit for 30 seconds after shaking—sometimes flavors need a moment to marry
“It’s too strong/boozy”
- Add 0.5 oz more apple cider to mellow it out
- Make sure you’re using the full 0.5 oz of maple syrup (sweetness balances alcohol heat)
- Try a different whiskey—some are naturally hotter than others
“Mine doesn’t look as pretty as the pictures”
- Get that garnish game up! A proper apple slice makes a huge difference
- Use a chilled glass—it makes everything look more professional
- Strain thoroughly so you don’t have ice chips floating on top
- Wipe any drips off the glass before serving

Autumn Harvest Whiskey Sour Recipe
Ingredients
- 1.5 oz whiskey
- 1 oz apple cider (the good stuff from the farm stand)
- 0.5 oz maple syrup
- 0.5 oz lemon juice (fresh squeezed)
- 2–3 dashes Angostura bitters
- Egg white (optional)
- Ice
Instructions
- Pour whiskey, apple cider, maple syrup, lemon juice, and bitters into a shaker.
- Dry shake for 10-15 seconds
- Add ice and shake it for 15-30 seconds until the shaker is frosty.
- Strain into a chilled coupe or Nick and Nora glass.
- Garnish with an extra dash of bitters or a thin apple slice (try an easy apple fan like I did)

Add Cinnamon Smoke
Add a touch of cinnamon smoke. It’s easier than it sounds.
- Light a sprinkle of ground cinnamon on a fire-safe dish (please don’t burn down your kitchen), or torch a cinnamon stick until it smolders like a tiny campfire.
- Trap the smoke under your empty glass for 10–15 seconds, then build or pour your cocktail inside.

How to Make a Batch Cocktail
For 8 servings:
- 12 oz whiskey (1.5 cups)
- 8 oz apple cider (1 cup)
- 4 oz maple syrup (½ cup)
- 4 oz lemon juice (½ cup)
- 16–24 dashes Angostura bitters
Combine everything in a large pitcher and stir well. Store in the fridge until party time.
When guests arrive, pour 3.5 oz of the mixture over ice in a shaker, give it a quick 15-second shake, and strain into their glass. If you want to use an egg white, do a 10-15 second dry shake and then add the ice to the shaker for another 15 second shake before pouring into a coupe glass (no ice in the glass!).
Party tip: Pre-slice your apple garnishes and keep them in lemon water so they don’t brown.
Mocktail Recipe
