I was craving something red, festive, and absolutely packed with flavor when I created this cocktail. The Allspice Pomegranate Sour hits all those marks. You get this gorgeous ruby color from the pomegranate juice, warm winter spice from the allspice simple syrup, bright citrus from the lime, and rum that ties everything together without fighting for attention.
Not only did I want to play with allspice, but my pomegranate tree actually gave me a few big, juicy pomegranates this year. I saved some seeds for garnishes, juiced the rest, and I’m even growing baby pomegranate trees from the fruit I harvested this fall.

What Makes This Cocktail Work
Pomegranate adds tart, rich fruitiness. It’s what gives the cocktail that stunning color and just enough bite. If you can’t juice your own pomegranates, grab a bottle of 100% pomegranate juice.
Allspice syrup provides cozy warmth. It brings subtle spice without overpowering the rum. The warmth plays beautifully against the tart fruit.
Lime brightens everything. It keeps the drink crisp and balances the syrup’s sweetness. Whenever possible, use fresh lime juice, not the bottled stuff.
Rum adds softness and roundness. Light rum keeps it bright and clean, but if you want more depth, swap in an aged rum. I still have a bottle of Havana Rum I’m working my way through and this was perfect in the cocktail.
Ways to Switch It Up
Add grenadine: For a sweeter, richer version, add 0.25 to 0.5 oz grenadine. It boosts color and makes the cocktail feel extra lush.
Make it a mocktail: Skip the rum and increase the pomegranate juice. Shake the same way and serve up. Still gorgeous, still festive.
Make it brighter: Increase lime to 1 oz for a sharper sour that really wakes up your palate.
Make it cozier: Use aged rum or add a splash of cinnamon syrup for extra holiday warmth.

Home Bar Tips
Double strain. Pomegranate can be pulpy, so double straining keeps your sour silky smooth.
Taste as you go. Limes vary a lot in acidity. If yours are super tart, dial back the juice slightly or add a touch more syrup.
Use fresh pomegranate seeds. They add brightness, texture, and make the drink look absolutely stunning. Plus, they’re fun to eat at the end.
Shake hard. Really get that ice moving. It aerates the drink and gives you that smooth, well-chilled finish that makes sours so satisfying.

Troubleshooting
Too tart? Reduce lime or add more allspice syrup (or a splash of grenadine).
Too sweet? Increase lime or reduce syrup slightly.
Too spicy? Decrease allspice syrup to 0.25 oz and work your way up from there.
Rum flavor is too strong? Use a lighter rum or increase pomegranate slightly to balance it out.
How to Make Allspice Simple Syrup
This simple syrup completely transforms a drink with minimal effort.
- 1 cup sugar
- 1 cup water
- 1 tbsp whole allspice berries
Simmer for 5 minutes, steep another 10, and strain.
Store in the fridge for a week or stick it into the freezer for a few months.
