Star Anise Simple Syrup

Jump to Recipe Jump to Video

Star anise simple syrup is one of those quiet workhorse syrups that instantly makes cocktails taste more polished. It has a warm, licorice-like flavor with gentle spice that feels cozy but not overpowering. Once combined into a simple syrup (think sweet goodness), the sharp edge softens, becoming smooth, aromatic, and easy to blend into classic and modern drinks.

Now, I know what you are thinking- “I hate licorice.” I’m not a fan either. I give my husband disgusted looks as he chows down on black licorice while we watch movies. Somehow, this simple syrup works, though. I can’t explain it, so it’s just something you will have to try.

This syrup is especially great for fall and winter cocktails, whiskey drinks, spiced sours, and even coffee or tea-based cocktails.

What Does Star Anise Taste Like?

Star anise has a bold aroma with notes similar to licorice, fennel, and warm baking spice. In syrup form, it becomes rounder and slightly sweet, adding depth without turning a drink into a candy-like anise bomb.

Similar to clove simple syrup, a little goes a long way, making this syrup perfect for layering flavors.

How to Use Star Anise Syrup in Cocktails

This syrup works best as a supporting flavor rather than the main focus. Start with a small amount and adjust from there.

It pairs especially well with:

  • Bourbon or rye whiskey
  • Dark rum
  • Pear, apple, or orange flavors
  • Coffee, black tea, or chai-inspired drinks

Try it in an old fashioned variation, a spiced sour, or a winter spritz with citrus.

Ingredients

  • 1 cup water
  • 1 cup sugar
  • 10 whole star anise pods

Instructions

  1. Combine the water and sugar in a saucepan over medium heat. Stir occasionally until the sugar is fully dissolved.
  2. Add the star anise pods and bring the mixture to a gentle simmer. Let it simmer for about 10 minutes, then turn off the heat. Allow the syrup to cool and steep for 1 hour. If the flavor isn’t strong enough for your taste, transfer everything to a mason jar and let it steep longer in the refrigerator, even overnight.
  3. Double-strain the syrup into a clean jar or bottle to remove all spice fragments (use a fine-mesh strainer, then cheesecloth). Store in the refrigerator.

Storage Tips

Keep your star anise simple syrup in an airtight glass container (like this one) in the refrigerator. It will stay fresh for about a week. If the syrup turns cloudy or smells off, it’s time to toss it and make a new batch.

Freeze the syrup in small batches (use these mason jars) to keep it longer and ready to use whenever you crave a cocktail.
